Quinoa Big Bowl June 16, 2010

Last time I made a quinoa meal, the guys were a little puzzled.  They liked it, but couldn’t place what kind of food it was….  Italian?  Greek?   My friend Amy cracked me up with she put an end to the questioning:  “It’s hippie food!” They seemed to understand that.  Along the same lines, I made this big bowl of quinoa and veggies last night for dinner and it was really satisfying.  The spiciness of the seasoning, crunch of the walnuts, and fresh veggies combined with the grain made for a nice one-bowl meal with a ton of protein.  If I had tofu, I might’ve thrown it in.  But I think it was fine as-is.

Quinoa Big Bowl
(Adapted from 101 Cookbooks)

Ingredients:

1/2 cup quinoa
1 cup water
1 bunch kale, de-stemmed and chopped
1 cup chopped broccoli
1/4 cup chopped walnuts
1 can chickpeas, drained and rinsed
1 tbs Jamaican seasoning (mix of cayenne, thyme, salt, and garlic)

Method:

Put the quinoa and water in a small pot, cover, and cook over low heat until the water is gone and quinoa is fluffy.

In the meantime, saute the chopped broccoli, kale, walnuts, and chickpeas in a little olive oil.  Stir in the seasoning, add to the cooked quinoa, and enjoy.  Easy!
